Red Velvet V-Day Cookies

I don’t know why it is, but we seriously have so many cake mixes and they all need to be used up.  The weird thing is, I hardly ever make cakes and when I do it’s a special occasion so I always make them from scratch.  So…. here I am trying to figure what in the world to do with all these cake mixes!  Here’s one little invention I made up that, if I may say so myself, went over quite well.

Red Velvet Heart Cookies

Super easy and perfect for Valentine’s Day!

1 Red Velvet Cake Mix

2 eggs

1/3 cup shortening (I like the butter flavored myself)

About 1 cup of white chocolate chips

Preheat oven to 375.  Mix top three ingredients until well blended.  Add in chips.  Roll 1-2 tablespoons of dough in a ball and shape into a heart as shown below.  (The dough does spread while baking so a more dramatic heart shape works best when shaping the dough). Bake 6-9 mins, depending on cookie size.
