Happy Thanksgiving Eve! I don’t know about you, but I’ve been spending the day making pie. And what a great day it is!
One of my favorite pies for Fall is this Apple Cranberry pie. It’s packed with fruit and not too sweet. (Sometimes you need something to balance out all those sweets on your plate!) Enjoy!
Apple Cranberry Pie
Pie pastry for a 9 inch double crust
1 cup sugar
2 tablespoons all purpose flour
¼ t salt
2 cups cranberries
½ cup raisins
4 apples peeled, cored and thinly sliced (can substitute pears)
Zest of 1 orange
2 T butter
Preheat oven to 425. Prepare pie pan with bottom pastry, leave top pastry aside.
In a large bowl, combine sugar, flour and salt. Add cranberries, raisins, apples and orange zest. Pile fruit mixture into pan, dot with butter. Cover with top crust. Cut a few vents for steam.
Bake for 20 minutes, then reduce heat to 350 and bake until crust is browned and fruit is tender, about 45-50 minutes longer.
